Classic Collection of Organic Ecuadorian Heirloom Chocolate
This collection features the four bars that highlight the unique flavors of heirloom 'Nacional' cacao. The Puerto Quito region, located within the UNESCO Chocó Andino Biosphere Reserve, is known for its exceptional biodiversity. Shade-grown cacao farming, as practiced by Nueva Esperanza farms, has been identified as an effective means of preserving this rich diversity.
1) 75% Organic Heirloom 'Nacional' Dark Chocolate
TASTING NOTES • Heirloom ‘Nacional’ varieties of cacao are world-renowned for their complex flavors and aromas and lack of bitterness. This bar is velvety smooth with fruity notes and a honey finish.
2) 75% Organic Dark Chocolate with Sea Salt
• This is our 75% dark chocolate bar carefully dusted with sea salt that was hand harvested in Duxbury Bay, Massachusetts by Salterie One (https://salterieone.com/)
TASTING NOTES • Sea salt adds subtle minerality and intensifies the full spectrum of flavor notes in the cacao. Dark chocolate and sea salt is the recommended combination of Magda Rénteria and Héctor Hurtado, who grew the cacao in these bars.
3) 75% Organic Dark Chocolate with Hand Roasted Nibs
• Nibs are cacao beans that have been fermented, roasted and winnowed. Our nibs are hand roasted in traditional clay pots over low heat to ensure a perfectly rich and even roast, and then carefully ground in a stone mortar and pestle to produce nib pieces of the perfect size.
